A recipe for moist, tender muffins featuring fresh rhubarb and finished with a crisp cinnamon sugar crust.

Ingredients

Scale
  • 1 cup fresh rhubarb, chopped
  • 1 3/4 cups all-purpose flour
  • 3/4 cup granulated sugar (for batter)
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 large egg
  • 1/2 cup buttermilk
  • 1 teaspoon vanilla extract
  • 1/4 cup granulated sugar (for topping)
  • 1 teaspoon ground cinnamon (for topping)

Instructions

  1. Preheat your oven to 400 degrees F (200 degrees C). Line a 12-cup muffin tin with paper liners or grease well.
  2. In a small bowl, toss the chopped rhubarb with 1 tablespoon of the batter sugar to lightly coat. Set aside.
  3. In a large bowl, whisk together the flour, remaining 3/4 cup sugar, baking powder, baking soda, and salt.
  4. In a separate medium bowl, whisk together the melted butter, egg, buttermilk, and vanilla extract until combined.
  5. Pour the wet ingredients into the dry ingredients. Mix gently until just combined. Do not overmix; a few lumps are fine.
  6. Gently fold in the coated rhubarb pieces.
  7. In a very small bowl, mix the 1/4 cup sugar and 1 teaspoon cinnamon for the topping.
  8. Fill the muffin cups about two-thirds full with batter.
  9. Sprinkle the cinnamon sugar topping evenly over the top of each muffin batter portion.
  10. Bake for 18 to 20 minutes, or until a toothpick inserted into the center comes out clean.
  11. Let the muffins cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

Notes

  • If your rhubarb stalks are very thick, chop them into smaller pieces, about 1/4 inch, for even distribution.
  • For extra moisture, you can substitute sour cream for the buttermilk, using the same measurement.
  • Do not overmix the batter; this develops gluten and results in tough muffins.
