Create a delightfully rich and velvety chocolate peppermint mousse. This dessert is airy, deeply chocolatey, and perfectly balanced with a cool mint finish. You will love this simple, impressive treat.

Ingredients

Scale
  • 6 ounces bittersweet chocolate, chopped
  • 1/2 cup heavy cream, divided
  • 2 large eggs, separated
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon peppermint extract
  • Pinch of salt
  • Optional: extra whipped cream and chocolate shavings for topping

Instructions

  1. Place the chopped chocolate in a heatproof bowl.
  2. Heat 2 tablespoons of the heavy cream in a small saucepan until just simmering. Pour the hot cream over the chocolate and let it sit for 2 minutes, then whisk until smooth. Set aside to cool slightly.
  3. In a separate clean bowl, beat the egg yolks with the sugar until pale and thick. Whisk the vanilla extract and peppermint extract into the cooled chocolate mixture.
  4. Gently fold the chocolate mixture into the egg yolk mixture until combined. You now have your chocolate base.
  5. In another clean, dry bowl, beat the egg whites with the pinch of salt until soft peaks form.
  6. In a third bowl, whip the remaining heavy cream until medium peaks form.
  7. Gently fold one-third of the whipped egg whites into the chocolate base to lighten it. Then, carefully fold in the remaining egg whites until just incorporated, being careful not to deflate the air.
  8. Fold in the whipped cream in two additions until the mousse is uniformly blended and airy.
  9. Divide the mousse among small serving dishes or ramekins.
  10. Chill in the refrigerator for at least 4 hours, or until firm. Garnish before serving.

Notes

  • Sasha suggests using high-quality dark chocolate for the best flavor.
  • Ensure your bowl and whisk for the egg whites are completely free of grease.
  • If you prefer a stronger mint flavor, add a drop or two more of peppermint extract, tasting as you go.
