A rich, savory-sweet soup made by roasting apples and pumpkin before pureeing them with aromatics.

Ingredients

Scale
  • 1 medium sugar pumpkin (about 3 lbs), halved and seeded
  • 2 large firm apples (like Honeycrisp or Gala), cored and quartered
  • 2 tablespoons olive oil, divided
  • 1 large yellow onion, roughly chopped
  • 2 cloves garlic, smashed
  • 4 cups vegetable broth
  • 1/2 cup heavy cream (optional)
  • 1 teaspoon fresh sage, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon butter (for finishing)

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
  2. Rub the cut sides of the pumpkin halves with 1 tablespoon of olive oil, salt, and pepper. Place cut-side down on a baking sheet.
  3. Toss the apple quarters with the remaining 1 tablespoon of olive oil. Place them on the same baking sheet.
  4. Roast the pumpkin for 40 to 50 minutes, or until tender when pierced with a fork. Roast the apples for 20 to 25 minutes until soft.
  5. Scoop the roasted pumpkin flesh into a large pot. Add the roasted apples, onion, and smashed garlic.
  6. Pour in the vegetable broth. Bring the mixture to a simmer over medium heat. Cook for 10 minutes to allow flavors to meld.
  7. Carefully transfer the soup mixture to a blender (or use an immersion blender directly in the pot). Blend until completely smooth.
  8. Return the pureed soup to the pot over low heat. Stir in the heavy cream, if using, and the chopped fresh sage. Heat through, but do not boil.
  9. Stir in the butter until melted. Taste and adjust salt and pepper as needed.
  10. Serve hot, optionally garnished with extra sage or a swirl of cream.

Notes

  • For a vegan option, omit the heavy cream and butter, or substitute with full-fat coconut milk and olive oil.
  • Use butternut squash instead of pumpkin for a slightly sweeter, smoother texture.
  • Roast the garlic cloves alongside the pumpkin and apples for a milder flavor.
