Transform Brussels sprouts from a dreaded vegetable into a delicious, craveable side dish with this simple roasted recipe. These Brussels sprouts are perfectly tender on the inside and delightfully crispy on the outside, finished with a sweet and tangy balsamic glaze.

Ingredients

Scale
  • 2 pounds Brussels sprouts, trimmed and halved
  • 3 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup balsamic vinegar
  • 1 tablespoon honey or maple syrup

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the Brussels sprouts with olive oil, salt, and pepper.
  3. Spread the Brussels sprouts in a single layer on a baking sheet.
  4. Roast for 20-25 minutes, or until tender and slightly crispy, flipping halfway through.
  5. While the sprouts are roasting, combine balsamic vinegar and honey (or maple syrup) in a small saucepan.
  6. Simmer over medium heat for 5-7 minutes, stirring occasionally, until the glaze thickens slightly.
  7. Once the Brussels sprouts are done roasting, drizzle the balsamic glaze over them and toss to coat.
  8. Serve immediately.

Notes

  • For extra crispy sprouts, you can broil them for the last 1-2 minutes of cooking, watching carefully to prevent burning.
  • Feel free to add a pinch of red pepper flakes to the glaze for a touch of heat.
  • If you don’t have honey or maple syrup, you can use brown sugar, but adjust the amount to your preference.
