Follow this simple recipe to make tender inside and crispy outside roasted cauliflower bites, perfect as an appetizer or side dish.

Ingredients

Scale
  • 1 large head cauliflower, cut into bite-sized florets
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • Optional: 1 tablespoon cornstarch (for extra crispiness)

Instructions

  1. Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper.
  2. In a large bowl, toss the cauliflower florets with olive oil, salt, pepper, garlic powder, and paprika. If using, sprinkle the cornstarch over the florets and toss again until lightly coated.
  3. Spread the seasoned cauliflower in a single layer on the prepared baking sheet. Do not overcrowd the pan; use two sheets if necessary for best crisping.
  4. Roast for 20 to 25 minutes, flipping the florets halfway through the cooking time.
  5. Continue roasting until the edges are golden brown and crispy.
  6. Remove from the oven and serve immediately with your preferred dipping sauce.

Notes

  • For air fryer cooking, cook at 400°F (200°C) for 12 to 15 minutes, shaking the basket halfway through.
  • To make a spicy aioli, mix 1/2 cup mayonnaise with 1 to 2 tablespoons sriracha and 1 teaspoon lemon juice.
  • Do not wash the cauliflower after cutting; pat it very dry if you wash it before seasoning.
