- 2 (15-ounce) cans cannellini beans, rinsed and drained
- 1/4 cup tahini
- 1/4 cup fresh lemon juice
- 2 tablespoons water (or more, to reach desired consistency)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Optional garnishes: fresh parsley, red pepper flakes
- Preheat your oven to 400°F (200°C).
- Cut off the top 1/4 inch of the garlic head to expose the cloves.
- Place the garlic head on a small piece of aluminum foil, drizzle with olive oil, and wrap tightly.
- Roast for 30-40 minutes, or until the garlic is soft and golden.
- Let the garlic cool slightly, then squeeze the roasted cloves out of their skins.
- In a food processor, combine the roasted garlic, rinsed cannellini beans, tahini, lemon juice, water, salt, and pepper.
- Process until smooth and creamy, adding more water a tablespoon at a time if needed to reach your desired consistency.
- Taste and adjust seasoning if necessary.
- Serve the dip with your favorite dippers, garnished with fresh parsley and red pepper flakes if desired.
Notes
- For a smoother dip, ensure your beans are well-rinsed and drained.
