Ingredients
Scale
1 (15-ounce) can chickpeas, rinsed and drained
1/2 cup roasted red peppers, drained
1/4 cup tahini
2 tablespoons fresh lemon juice
1 clove garlic
1 tablespoon olive oil, plus more for drizzling
1/2 teaspoon salt
1/4 teaspoon smoked paprika
2-4 tablespoons ice water (as needed)
Instructions
Place the rinsed chickpeas, roasted red peppers, tahini, lemon juice, garlic, olive oil, salt, and smoked paprika into a food processor.
Process the mixture until it starts to break down. Scrape down the sides of the bowl as needed.
With the processor running, slowly drizzle in 2 tablespoons of ice water. This helps create a creamier texture.
Continue processing until the hummus is very smooth. If it seems too thick, add the remaining ice water, one tablespoon at a time, until you reach your desired consistency.
Taste and adjust seasoning if necessary. You might want more salt or lemon juice.
Transfer the hummus to a serving bowl. Drizzle with a little extra olive oil and sprinkle with a pinch more smoked paprika before serving.
Notes
For the best flavor, use high-quality jarred roasted red peppers.
If you prefer a tangier flavor, add a touch more lemon juice.
If you do not have smoked paprika, regular paprika works, but you will lose the smoky depth.
This hummus tastes best when allowed to sit for about 30 minutes before serving, allowing the flavors to meld.
