Ingredients
Scale
1 (15 ounce) can chickpeas, rinsed, drained, and patted very dry
1/4 cup shelled pistachios, roughly chopped
1 tablespoon olive oil
1 teaspoon smoked paprika
1/2 teaspoon cumin
1/2 teaspoon chili powder
1/4 teaspoon cayenne pepper (adjust for your heat preference)
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
Preheat your oven to 400 degrees F (200 degrees C).
In a medium bowl, toss the dried chickpeas with olive oil until lightly coated.
Add the smoked paprika, cumin, chili powder, cayenne pepper, salt, and black pepper to the chickpeas. Toss well to coat evenly.
Spread the seasoned chickpeas in a single layer on a baking sheet lined with parchment paper.
Roast for 15 minutes.
Remove the pan from the oven and sprinkle the chopped pistachios over the chickpeas. Gently toss them on the sheet.
Return the pan to the oven and roast for another 5 to 10 minutes, or until the chickpeas are deeply golden and crunchy. Watch closely to prevent burning.
Let the chickpeas cool completely on the baking sheet. They will crisp up more as they cool.
Notes
Drying the chickpeas thoroughly is the key to maximum crispiness. Use a clean kitchen towel or paper towels.
Taste your spice mixture before adding it to the chickpeas to gauge the heat level Sasha would approve of!
