A simple method for making perfectly tender sweet potatoes with crispy edges, featuring two popular flavor variations: savory Garlic Parmesan and sweet Honey Maple.

Ingredients

Scale
  • 3 large sweet potatoes, peeled and cut into 1-inch cubes
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1/2 cup grated Parmesan cheese (for Garlic Parmesan variation)
  • 2 tablespoons melted butter or coconut oil (for Garlic Parmesan variation)
  • 2 tablespoons honey or maple syrup (for Honey Maple variation)
  • 1/2 teaspoon cinnamon (for Honey Maple variation)

Instructions

  1. Preheat your oven to 425 degrees Fahrenheit (220 degrees Celsius). Line a large baking sheet with parchment paper for easier cleanup.
  2. Place the cubed sweet potatoes in a large bowl. Drizzle with olive oil, salt, pepper, and garlic powder. Toss well until all pieces are evenly coated.
  3. Spread the sweet potatoes onto the prepared baking sheet in a single layer. Do not overcrowd the pan; use two sheets if necessary to promote crisping.
  4. Roast for 20 minutes.
  5. Remove the pan from the oven. For the Garlic Parmesan version, toss the potatoes with melted butter and Parmesan cheese. For the Honey Maple version, drizzle with honey or maple syrup and sprinkle with cinnamon.
  6. Return the potatoes to the oven and roast for another 5 to 10 minutes, or until the edges are caramelized and the potatoes are tender when pierced with a fork.
  7. Serve immediately.

Notes

  • For extra crispiness, toss the potatoes with 1 tablespoon of cornstarch along with the oil and seasonings before roasting.
  • Ensure the oven is fully preheated to the correct temperature before placing the potatoes inside.
  • If you need a vegan option, skip the Parmesan and use maple syrup for both variations, adding a pinch of smoked paprika for depth.
