Ingredients

Scale
  • 2 ¼ teaspoons active dry yeast
  • 1 teaspoon granulated sugar
  • 1 cup warm milk (105-115°F)
  • 2 tablespoons unsalted butter, melted
  • 1 large egg, lightly beaten
  • 3 cups all-purpose flour, plus more for dusting
  • 1 teaspoon salt
  • 1 tablespoon fresh rosemary, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons unsalted butter, melted (for brushing)
  • Flaky sea salt, for sprinkling (optional)

Instructions

  1. In a small bowl, combine the yeast, sugar, and warm milk. Let stand for 5-10 minutes until foamy.
  2. In a large bowl, whisk together the melted butter and egg. Pour in the yeast mixture and stir to combine.
  3. Add the flour and salt to the wet ingredients. Mix until a shaggy dough forms.
  4. Turn the dough out onto a lightly floured surface and knead for 8-10 minutes, until smooth and elastic.
  5. Place the dough in a lightly greased bowl, cover with plastic wrap, and let rise in a warm place for 1-1.5 hours, or until doubled in size.
  6. Punch down the dough and turn it out onto a lightly floured surface.
  7. Roll the dough into a 12×9-inch rectangle.
  8. Sprinkle the chopped rosemary and minced garlic evenly over the dough.
  9. Starting from the long side, tightly roll up the dough.
  10. Cut the roll into 12 equal pieces.
  11. Arrange the pieces cut-side up in a greased 9-inch round baking pan.
  12. Cover the pan and let the rolls rise in a warm place for 30-45 minutes, or until puffy.
  13. Preheat your oven to 375°F (190°C).
  14. Bake for 20-25 minutes, or until golden brown and cooked through.
  15. Brush the tops of the warm rolls with the additional melted butter and sprinkle with flaky sea salt, if desired.
  16. Serve warm and enjoy pulling them apart!

Notes

  • Ensure your milk is warm, not hot, to activate the yeast properly.
  • Kneading develops the gluten, giving the rolls their soft texture.
  • A warm place for rising can be a slightly warmed oven (turned off) or a sunny spot.
