Ingredients

Scale
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup cold unsalted butter, cut into small pieces
  • 4 tablespoons ice water
  • 3 ripe pears, peeled, cored, and thinly sliced
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1 tablespoon lemon juice
  • 1 egg, beaten (for egg wash)
  • 1 tablespoon turbinado sugar (for sprinkling)

Instructions

  1. Prepare the crust: In a large bowl, whisk together the flour and salt. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  2. Gradually add the ice water, mixing just until the dough comes together. Form the dough into a disk, wrap it, and chill for at least 30 minutes.
  3. Prepare the filling: In a separate bowl, gently toss the sliced pears with the granulated sugar, cinnamon, nutmeg, cloves, and lemon juice.
  4. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  5. On a lightly floured surface, roll the chilled dough into a rough 12-inch circle. Transfer the dough to the prepared baking sheet.
  6. Arrange the spiced pear slices over the dough, leaving a 2-inch border around the edge.
  7. Fold the dough border up and over the edges of the pears to create a rustic crust.
  8. Brush the exposed crust with the beaten egg and sprinkle the turbinado sugar over the crust.
  9. Bake for 30 to 35 minutes, or until the crust is golden brown and the pears are tender.
  10. Let the galette cool slightly before slicing and serving.

Notes

  • Sasha suggests adding a pinch of fresh ginger to the spice mix for an extra kick.
  • If your pears are very soft, reduce the baking time slightly.
  • This galette is wonderful served warm with a scoop of vanilla ice cream.
