Make these irresistible Salted Cashew Caramel Clusters. You get a satisfying crunch from the cashews coated in a rich, homemade salted caramel. Anya brings her artistic touch to this simple, wonderful treat.

Ingredients

Scale
  • 1 cup raw cashews
  • 1/2 cup granulated sugar
  • 1/4 cup light corn syrup
  • 1/4 cup heavy cream
  • 2 tablespoons unsalted butter
  • 1/2 teaspoon sea salt plus more for sprinkling
  • 1/2 teaspoon vanilla extract

Instructions

  1. Line a baking sheet with parchment paper. Set aside.
  2. In a medium, heavy-bottomed saucepan, combine the sugar and corn syrup. Cook over medium heat, stirring until the sugar dissolves.
  3. Stop stirring. Allow the mixture to boil until it reaches a deep amber color, about 5-8 minutes. Watch this closely; it burns fast.
  4. Remove the pan from the heat. Carefully whisk in the heavy cream. The mixture will bubble vigorously.
  5. Whisk in the butter until fully melted and smooth.
  6. Stir in the 1/2 teaspoon of sea salt and the vanilla extract.
  7. Fold in the raw cashews until they are completely coated in the caramel.
  8. Drop spoonfuls of the caramel-nut mixture onto the prepared baking sheet, forming clusters. Work quickly.
  9. Immediately sprinkle a tiny pinch of extra sea salt over the top of each warm cluster.
  10. Let the clusters cool completely at room temperature until firm, about 30 minutes.
  11. Break them apart gently if they have stuck together. Store in an airtight container.

Notes

  • We love using a light corn syrup here to prevent the caramel from crystallizing.
  • If you prefer a darker caramel flavor, cook the sugar slightly longer before adding the cream.
  • For an extra layer of flavor, you can toast the cashews lightly before adding them to the caramel.
