Ingredients

Scale
  • 1 pound smoked sausage, sliced
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1 cup brown or green lentils, rinsed
  • 6 cups chicken or vegetable broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1/2 cup dry red wine (optional)
  • 1 bay leaf
  • 5 ounces kale, stems removed and chopped
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add sausage and cook until lightly browned, about 5 minutes. Remove sausage and set aside.
  2. Add onion, carrots, and celery to the pot. Cook until softened, about 7 minutes.
  3. Stir in garlic, thyme, and rosemary. Cook for 1 minute until fragrant.
  4. Add rinsed lentils, broth, diced tomatoes, red wine (if using), and bay leaf to the pot. Bring the mixture to a boil.
  5. Reduce heat to low, cover, and simmer for 25 minutes, or until lentils are tender.
  6. Stir in the cooked sausage and chopped kale. Cook for another 5-7 minutes, until the kale wilts.
  7. Remove the bay leaf. Season with salt and pepper to your liking. Serve hot.

Notes

  • Feel free to use your favorite type of smoked sausage, such as andouille or kielbasa.
  • If you skip the wine, use an extra 1/2 cup of broth.
  • For a spicier stew, add a pinch of red pepper flakes with the other dry herbs.
