Ingredients
Scale
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup cold unsalted butter, cubed
1/2 cup shredded sharp cheddar cheese
2 tablespoons finely chopped fresh rosemary
1 tablespoon finely chopped fresh thyme
1/4 cup ice water (or as needed)
1 egg, beaten (for egg wash)
Flaky sea salt (for topping)
Instructions
In a large bowl, whisk together the flour, baking powder, and salt.
Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
Stir in the shredded cheddar cheese, rosemary, and thyme until evenly distributed.
Gradually add the ice water, one tablespoon at a time, mixing until the dough just comes together. Do not overmix.
Gather the dough into a ball, flatten it into a disk, wrap it in plastic wrap, and chill it in the refrigerator for at least 30 minutes.
Preheat your oven to 400°F (200°C). Line two baking sheets with parchment paper.
Divide the chilled dough in half. On a lightly floured surface, roll one half out very thinly, about 1/16 inch thick.
Use a pizza cutter or knife to cut the dough into small squares or desired shapes. Place the cut crackers onto the prepared baking sheets.
Brush the tops lightly with the beaten egg wash and sprinkle with flaky sea salt.
Bake for 10 to 14 minutes, rotating the sheets halfway through, until the crackers are golden brown and crisp.
Let the crackers cool completely on the baking sheets before serving. They will crisp up more as they cool.
Notes
Anya suggests using high-quality cheese for the best flavor in your crackers.
If you prefer a spicier kick, Sasha recommends adding a pinch of cayenne pepper to the dry ingredients.
Keep leftover crackers in an airtight container at room temperature for up to one week.
