Ingredients

Scale
  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1/2 cup grated zucchini, squeezed dry
  • 1/2 cup shredded cheddar cheese or crumbled feta cheese
  • 1/4 cup chopped fresh chives or parsley
  • 1 large egg
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1/2 cup shredded zucchini, squeezed dry (extra for moisture)

Instructions

  1. Preheat your oven to 400 degrees F (200 degrees C). Line a 12-cup muffin tin with paper liners or grease it well.
  2. In a large bowl, whisk together the flour, baking soda, baking powder, salt, pepper, and oregano.
  3. In a separate medium bowl, lightly beat the egg. Whisk in the milk and vegetable oil until combined.
  4. Gently fold the wet ingredients into the dry ingredients just until mixed. Do not overmix; a few lumps are fine.
  5. Fold in the 1/2 cup shredded zucchini, the cheese, and the fresh herbs.
  6. Divide the batter evenly among the 12 prepared muffin cups. They should be about two-thirds full.
  7. Bake for 18 to 20 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the muffins cool in the tin for five minutes before transferring them to a wire rack to cool completely. Enjoy!

Notes

  • Squeezing the moisture from the zucchini is key; wrap it in a paper towel and press firmly.
  • Feel free to swap the herbs; thyme or dill work wonderfully here.
  • For extra flavor, add a pinch of garlic powder to the dry ingredients.
  • These muffins freeze well; wrap them individually before freezing.
