Learn how to make a perfectly seared sesame-crusted tuna steak with a rare center, served with a delicious dipping sauce. This recipe is inspired by the friendship and culinary adventures of Anya, Lena, and Sasha from Savor Sensations.

Ingredients

Scale
  • 1 pound tuna steaks, about 1 inch thick
  • 1/4 cup sesame seeds
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, minced
  • 1/4 cup mayonnaise
  • 1 tablespoon sriracha (or to taste)
  • 1 tablespoon chopped fresh cilantro (optional)
  • 1 tablespoon olive oil

Instructions

  1. In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, ginger, and garlic. Place tuna steaks in a shallow dish and pour marinade over them. Let marinate for 15-20 minutes, flipping halfway through.
  2. While tuna is marinating, prepare the dipping sauce. In another small bowl, mix mayonnaise, sriracha, and cilantro (if using) until well combined. Set aside.
  3. Place sesame seeds on a plate. Remove tuna steaks from marinade and gently press each side into sesame seeds, coating evenly.
  4. Heat olive oil in a skillet over medium-high heat.
  5. Carefully place tuna steaks in the hot skillet. Sear for 1-2 minutes per side for rare, or longer for your desired doneness. You want a nice crust on the outside and a rare, pink center.
  6. Remove tuna from skillet and let it rest for a minute or two before slicing.
  7. Serve sesame-crusted tuna steaks with the prepared dipping sauce.

Notes

  • For a deeper flavor, you can marinate the tuna for up to 30 minutes.
  • Adjust the amount of sriracha in the dipping sauce to control the spice level.
  • If you don’t have rice vinegar, you can use white wine vinegar or apple cider vinegar.
