Ingredients
Scale
1 block (14 ounces) extra-firm tofu, pressed and cubed
1 tablespoon olive oil
2 tablespoons cornstarch
1/4 cup Dijon mustard
3 tablespoons honey (or maple syrup for vegan option)
1 tablespoon apple cider vinegar
1 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup broccoli florets
1 red bell pepper, cut into chunks
Instructions
Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
Press the tofu for at least 20 minutes to remove excess water. Cut the pressed tofu into 1-inch cubes.
In a medium bowl, toss the tofu cubes with olive oil until lightly coated. Sprinkle the cornstarch over the tofu and toss again until every piece is lightly dusted.
Spread the coated tofu in a single layer on one half of the prepared baking sheet.
In a small bowl, whisk together the Dijon mustard, honey, apple cider vinegar, garlic powder, salt, and pepper to create the glaze.
Toss the broccoli florets and red bell pepper chunks with 1 teaspoon of the prepared glaze mixture. Spread the vegetables on the other half of the baking sheet.
Bake the tofu and vegetables for 15 minutes.
Remove the sheet pan from the oven. Brush the remaining glaze mixture evenly over the tofu cubes.
Return the sheet pan to the oven and bake for another 10 to 15 minutes, or until the tofu is golden brown and crispy and the vegetables are tender.
Serve immediately.
Notes
Pressing the tofu thoroughly is key to achieving a crispy texture. You can use a tofu press or wrap the block in paper towels and place heavy objects on top.
For extra crispiness, you can briefly toss the tofu in a small amount of neutral oil after baking, before adding the final glaze, and return it to the oven for 3 minutes.
If you prefer a less sweet glaze, reduce the honey amount by 1 teaspoon.
