Ingredients
Scale
4 (5 ounce) tilapia fillets
1 pound fresh green beans, trimmed
2 tablespoons olive oil, divided
1/2 cup grated Parmesan cheese
1/4 cup panko breadcrumbs
1 teaspoon garlic powder
1/2 teaspoon dried oregano
1/4 teaspoon salt
1/4 teaspoon black pepper
1 lemon, cut into wedges
Instructions
Preheat your oven to 400 degrees Fahrenheit. Line a large baking sheet with parchment paper for easier cleanup.
Toss the trimmed green beans with 1 tablespoon of olive oil, salt, and pepper directly on the prepared baking sheet. Spread them into an even layer.
In a small bowl, combine the grated Parmesan cheese, panko breadcrumbs, garlic powder, and oregano. Mix well.
Pat the tilapia fillets dry with paper towels. Brush the remaining 1 tablespoon of olive oil lightly over the top surface of each fillet.
Press the Parmesan mixture firmly onto the oiled side of each tilapia fillet, creating an even crust.
Place the crusted tilapia fillets on the baking sheet among the green beans, leaving a little space between the fish and the vegetables.
Bake for 12 to 15 minutes, or until the fish flakes easily with a fork and the Parmesan crust is golden brown and crispy. Cooking time depends on fillet thickness.
Remove from the oven and serve immediately with fresh lemon wedges.
Notes
For extra crispiness, you can briefly place the pan under the broiler for the last 1-2 minutes, watching carefully to prevent burning the cheese.
If your green beans are very thick, blanch them in boiling water for 2 minutes before tossing with oil to ensure they cook through at the same rate as the fish.
