Make crispy smashed potatoes directly on a sheet pan and serve them with a simple homemade garlic aioli dipping sauce.

Ingredients

Scale
  • 2 lbs small potatoes (such as Yukon Gold or red potatoes)
  • 3 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 cup mayonnaise
  • 1 clove garlic, minced
  • 1 teaspoon lemon juice
  • 1 teaspoon water (optional, for thinning)

Instructions

  1. Preheat your oven to 425 degrees Fahrenheit (220 degrees Celsius).
  2. Place the potatoes in a large pot and cover them with cold, salted water. Bring the water to a boil and cook the potatoes until they are fork-tender, about 15 to 20 minutes. Drain the potatoes well.
  3. Spread the drained potatoes in a single layer on a large, rimmed baking sheet.
  4. Use the bottom of a sturdy glass or a potato masher to gently press down on each potato until it is flattened to about 1/2 inch thickness. Do not smash them completely flat.
  5. Drizzle the olive oil over the smashed potatoes. Sprinkle evenly with kosher salt, black pepper, and garlic powder.
  6. Roast for 25 to 35 minutes, or until the edges are deeply golden brown and crispy.
  7. While the potatoes roast, prepare the aioli: In a small bowl, combine the mayonnaise, minced garlic, and lemon juice. Mix until smooth. Add water one teaspoon at a time if you prefer a thinner consistency.
  8. Remove the potatoes from the oven and serve immediately with the garlic aioli for dipping.

Notes

  • For extra crispiness, you can briefly place the baking sheet in the oven while it preheats.
  • Use small potatoes for the best smashing results.
  • If you do not have fresh garlic, use 1/4 teaspoon of garlic powder in the aioli instead.
