Ingredients
Scale
1 red bell pepper, sliced
1 green bell pepper, sliced
1 yellow bell pepper, sliced
1 large onion, sliced
1 tablespoon olive oil
1 teaspoon chili powder
1 teaspoon cumin
1/2 teaspoon smoked paprika
1/4 teaspoon garlic powder
Salt and pepper to taste
Tortillas (for serving)
Optional toppings: salsa, avocado, lime wedges
Instructions
Preheat your oven to 400°F (200°C).
Place all the sliced vegetables onto a large sheet pan.
Drizzle the olive oil over the vegetables.
Sprinkle the chili powder, cumin, smoked paprika, garlic powder, salt, and pepper over the vegetables.
Toss everything together directly on the sheet pan until the vegetables are evenly coated with the spices.
Spread the vegetables into a single layer on the sheet pan.
Bake for 20 to 25 minutes, tossing halfway through, until the vegetables are tender and slightly caramelized.
Warm your tortillas according to package directions.
Serve the roasted vegetables immediately in the warm tortillas with your favorite toppings.
Notes
We love using Anya’s trick of adding a squeeze of fresh lime juice right before serving for brightness.
If you like more heat, Sasha suggests adding a pinch of cayenne pepper with the other spices.
Make sure not to overcrowd the pan; use two if necessary for better roasting.
