Follow this simple method to make roasted potatoes with crispy outsides and fluffy insides, perfect as a traditional Irish side dish.

Ingredients

Scale
  • 2 lbs Russet potatoes, peeled and cut into 1.5-inch chunks
  • 3 tablespoons olive oil
  • 1 teaspoon coarse salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried rosemary
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
  2. Place the potato chunks in a large pot and cover them with cold water. Add a pinch of salt. Bring the water to a boil and cook for 8 minutes until the edges start to soften slightly.
  3. Drain the potatoes completely in a colander. Shake the colander gently to rough up the edges of the potatoes; this helps create crispiness.
  4. Toss the roughed-up potatoes in a large bowl with the olive oil, salt, pepper, and dried rosemary until they are evenly coated.
  5. Spread the potatoes in a single layer on a large baking sheet. Do not overcrowd the pan.
  6. Roast for 35 to 45 minutes, turning them halfway through, until they are deep golden brown and crisp.
  7. Remove from the oven, sprinkle with fresh parsley, and serve immediately.

Notes

  • For extra crispiness, ensure the potatoes are completely dry after boiling before adding the oil.
  • Use Russet or Yukon Gold potatoes for the best fluffy interior texture.
  • If your potatoes are not browning evenly, give them a quick toss halfway through the roasting time.
