Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can kidney beans, rinsed and drained
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 4 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon chili powder
  • Salt and black pepper to taste
  • Tortilla strips, for topping
  • Optional garnishes: cilantro, sour cream, lime wedges

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and cook until softened, about 5 minutes.
  3. Stir in the minced garlic, cumin, smoked paprika, and chili powder. Cook for 1 minute until fragrant.
  4. Add the rinsed beans, diced tomatoes (with their juice), and vegetable broth to the pot.
  5. Bring the soup to a simmer. Reduce heat to low, cover, and let it cook for 15 minutes so the flavors meld together.
  6. Use an immersion blender or carefully transfer half of the soup to a regular blender and blend until smooth. Return the blended portion to the pot if using a regular blender. This step adds creaminess.
  7. Season the soup with salt and pepper to your taste.
  8. Ladle the hot soup into bowls.
  9. Top generously with crispy tortilla strips and your favorite garnishes before serving.

Notes

  • For extra smoky flavor, you can add a pinch of chipotle powder.
  • If you like a thinner soup, add a little more broth until you reach your desired consistency.
  • Make sure your tortilla strips are fully cooled before adding them; this keeps them crunchy longer.
