Use your sourdough starter leftovers to make this simple, no-waste sourdough discard pizza dough. It creates a satisfying crust that is both chewy and crispy, perfect for weeknight sourdough pizza.

Ingredients

Scale
  • 1 cup sourdough discard (unfed starter)
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon olive oil
  • 1/4 cup warm water (or slightly more, as needed)

Instructions

  1. In a medium bowl, combine the sourdough discard, flour, baking powder, and salt. Mix them together with a spoon until they form a shaggy mass.
  2. Add the olive oil and begin mixing with your hands.
  3. Slowly add the warm water, one tablespoon at a time, mixing until a cohesive dough forms. You may not need all the water, or you might need a tiny bit more, depending on the hydration of your discard.
  4. Turn the dough out onto a lightly floured surface. Knead for about 3 to 5 minutes until the dough is smooth and elastic. This dough does not require a long rise time.
  5. Divide the dough in half for two medium pizzas, or use the whole batch for one large pizza.
  6. Preheat your oven and pizza stone (if using) to 475 degrees Fahrenheit (245 degrees Celsius).
  7. Shape the dough to your desired thickness. For a crispier crust, roll it thin. For a chewier crust, press it out by hand, leaving a slightly thicker edge.
  8. Transfer the dough to a prepared pizza peel or baking sheet. Add your sauce and toppings.
  9. Bake for 10 to 15 minutes, or until the crust is golden brown and the cheese is bubbly.

Notes

  • This recipe focuses on using sourdough discard for flavor without a long fermentation, making it a quick sourdough discard crust option.
  • If you prefer a slightly tangier flavor, let the mixed dough rest for 30 minutes before shaping.
  • For a crispier sourdough discard pizza, bake directly on a preheated pizza stone or steel.
  • This recipe is a great example of no waste sourdough cooking.
