Ingredients
Scale
1 cup fresh raspberries
1 cup fresh lemon juice (about 4-5 lemons)
1 cup granulated sugar
4 cups cold water
2 cups sparkling water or club soda
Lemon slices, for garnish
Extra raspberries, for garnish
Instructions
Combine the raspberries, lemon juice, and sugar in a small saucepan.
Heat the mixture over medium heat, stirring until the sugar completely dissolves. Do not boil.
Remove the saucepan from the heat. Let the mixture steep for 15 minutes to allow the raspberry flavor to deepen.
Strain the syrup through a fine-mesh sieve into a pitcher, pressing gently on the solids to extract all the liquid. Discard the solids.
Stir the 4 cups of cold water into the raspberry-lemon syrup in the pitcher. Chill this base completely in the refrigerator, about 1 hour.
When ready to serve, pour the chilled base into glasses filled with ice.
Top each glass with sparkling water or club soda.
Garnish with fresh lemon slices and extra raspberries.
Notes
Anya suggests tasting the syrup before adding water; adjust sugar if your lemons are very tart.
For a less sweet drink, reduce the initial sugar amount to 3/4 cup.
You can substitute fresh or frozen raspberries. If using frozen, let them thaw slightly before heating.
