Ingredients

Scale
  • 1 cup rolled oats
  • 1/2 cup pumpkin puree (not pie filling)
  • 1/4 cup almond butter
  • 2 tablespoons maple syrup
  • 1 tablespoon chia seeds
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • Pinch of salt
  • Optional: 2 tablespoons shredded unsweetened coconut for rolling

Instructions

  1. Place all ingredients except coconut (if using) into a food processor.
  2. Pulse the mixture until it comes together and forms a sticky dough. Stop and scrape down the sides as needed.
  3. If the mixture seems too wet, add a tablespoon more oats. If too dry, add a teaspoon of water or more pumpkin puree.
  4. Roll the mixture into small, bite-sized balls, about 1 inch in diameter.
  5. If using, roll the finished balls in shredded coconut.
  6. Place the energy balls on a plate or baking sheet lined with parchment paper.
  7. Chill in the refrigerator for at least 30 minutes to firm up before serving.
  8. Store leftovers in an airtight container in the refrigerator.

Notes

  • Anya suggests tasting the mixture before rolling to adjust spices to your liking.
  • You can substitute sunflower seed butter for almond butter if you have nut allergies.
  • These balls freeze well for up to three months.
