Ingredients
Scale
6 large eggs
1/2 cup milk or half-and-half
1 cup shredded Monterey Jack cheese
1/2 cup crumbled cotija cheese
1 cup black beans, rinsed and drained
1 cup salsa roja (medium or hot)
1/2 cup finely chopped onion
1/4 cup chopped fresh cilantro
1 jalapeño, seeded and minced
1 teaspoon chili powder
1/2 teaspoon cumin
Salt and pepper to taste
Optional toppings: sliced avocado, sour cream
Instructions
Preheat your oven to 375°F (190°C). Lightly grease an 8×8 inch baking dish.
In a medium bowl, whisk together the eggs and milk. Season with salt, pepper, chili powder, and cumin.
Scatter the black beans, chopped onion, minced jalapeño, and half of the Monterey Jack cheese evenly over the bottom of the prepared baking dish.
Pour the egg mixture over the bean and vegetable layer.
Gently spoon the salsa roja over the top of the eggs, leaving some patches uncovered.
Sprinkle the remaining Monterey Jack cheese and all of the cotija cheese over the salsa layer.
Bake for 25 to 30 minutes, or until the eggs are set and the top is lightly golden. A knife inserted near the center should come out clean.
Let the bake rest for 5 minutes before slicing. Garnish with fresh cilantro and serve warm with your favorite toppings.
Notes
You can prepare the entire dish the night before, cover it, and refrigerate. Add about 5-10 minutes to the baking time if baking straight from the fridge.
Adjust the heat by using a spicier salsa or leaving some seeds in the jalapeño.
This bake freezes well. Cut individual portions, wrap tightly, and freeze for up to one month. Reheat in the microwave or oven.
