Create a restaurant-quality stuffed chicken breast for a special weeknight meal. This recipe features tender chicken filled with a savory mix of spinach and feta cheese. It is simple enough for a busy evening but impressive enough for guests. Sasha brings her intuitive flair to this dish.

Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 cup fresh spinach, chopped
  • 1/2 cup crumbled feta cheese
  • 2 cloves garlic, minced
  • 1/4 teaspoon black pepper
  • Pinch of salt

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly grease a baking dish.
  2. Prepare the filling: In a small bowl, combine the chopped spinach, crumbled feta cheese, minced garlic, pepper, and salt. Mix well.
  3. Prepare the chicken: Place a chicken breast on a cutting board. Carefully cut a deep pocket into the thickest side of the chicken, being sure not to cut all the way through.
  4. Stuff the chicken: Spoon the spinach and feta mixture evenly into the pockets of the four chicken breasts.
  5. Sear the chicken: Heat the olive oil in an oven-safe skillet over medium-high heat. Sear the stuffed chicken breasts for 2-3 minutes per side until lightly golden brown.
  6. Bake: Transfer the skillet to the preheated oven. Bake for 18-22 minutes, or until the internal temperature reaches 165°F (74°C) and the juices run clear.
  7. Rest and serve: Remove the chicken from the oven. Let it rest for 5 minutes before slicing and serving warm.

Notes

  • If you do not have an oven-safe skillet, you can sear the chicken in a regular skillet and then transfer it to a baking dish before placing it in the oven.
  • Sasha suggests adding a small pinch of dried oregano to the filling for extra flavor.
  • For extra moisture, you can lightly brush the outside of the chicken with a little melted butter before baking.
