Prepare a simple yet impressive salmon dish featuring a sweet and tangy glaze made from fresh strawberries and balsamic vinegar.

Ingredients

Scale
  • 4 (6 ounce) salmon fillets, skin on or off
  • 1 tablespoon olive oil
  • Salt and black pepper to taste
  • 1 cup fresh strawberries, hulled and quartered
  • 1/4 cup balsamic vinegar
  • 2 tablespoons brown sugar
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Pat the salmon fillets dry with paper towels. Rub them lightly with olive oil and season with salt and pepper. Place the fillets on the prepared baking sheet.
  3. Make the glaze: In a small saucepan, combine the quartered strawberries, balsamic vinegar, brown sugar, Dijon mustard, and minced garlic.
  4. Bring the mixture to a simmer over medium heat. Cook for 8 to 10 minutes, stirring occasionally, until the strawberries soften and the liquid reduces slightly to a syrupy consistency.
  5. Remove the saucepan from the heat. Use a fork or potato masher to gently mash some of the strawberries to thicken the sauce further.
  6. Spoon half of the strawberry balsamic glaze evenly over the tops of the salmon fillets.
  7. Bake for 12 to 15 minutes, depending on the thickness of the salmon, until it flakes easily with a fork.
  8. Remove the salmon from the oven. Brush the remaining glaze over the cooked salmon before serving.

Notes

  • For a thicker glaze, simmer the sauce for an extra 2 minutes.
  • If you prefer pan-searing, cook the salmon skin-side down for 4 minutes, flip, cook for 3 more minutes, then brush with glaze and cook for 1 minute more.
  • Serve this salmon with roasted asparagus or a simple green salad.
