Make a flavorful street corn chicken rice bowl quickly. This recipe combines seasoned chicken, charred corn, and a zesty cilantro-lime crema over rice for an easy weeknight dinner.

Ingredients

Scale
  • 1 lb boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 2 cups cooked white or brown rice
  • 2 cups frozen or fresh corn kernels
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream or Greek yogurt
  • 2 tablespoons fresh lime juice
  • 1/4 cup chopped fresh cilantro
  • 1/4 teaspoon garlic powder
  • 1/4 cup crumbled cotija cheese (optional)
  • Tajín seasoning, for sprinkling

Instructions

  1. Season the chicken pieces with chili powder, cumin, smoked paprika, salt, and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook for 5-7 minutes until browned and cooked through. Remove chicken and set aside.
  3. Add the corn kernels to the same skillet. Cook for 5 minutes, stirring occasionally, until the corn is lightly charred.
  4. While the corn cooks, prepare the crema: In a small bowl, whisk together mayonnaise, sour cream or yogurt, lime juice, cilantro, and garlic powder. Season with a pinch of salt.
  5. To assemble the bowls, divide the cooked rice among four bowls.
  6. Top the rice with the cooked chicken and the charred corn.
  7. Drizzle generously with the cilantro-lime crema.
  8. Sprinkle with cotija cheese, if using, and finish with a dusting of Tajín seasoning.

Notes

  • For extra smoky flavor, char the corn directly over a gas burner flame for a few minutes before adding it to the skillet.
  • You can substitute chicken thighs for breasts if you prefer a richer flavor.
  • Prepare the rice ahead of time to meet the 30-minute goal.
