Create fun and tasty Sushi Burritos for a memorable lunch. This recipe brings together the best of sushi flavors in an easy-to-eat wrap format.

Ingredients

Scale
  • 1 cup short-grain sushi rice
  • 1.25 cups water
  • 2 tablespoons rice vinegar
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 4 sheets nori (seaweed paper)
  • 1/2 lb sushi-grade raw fish (like salmon or tuna), cut into strips
  • 1 avocado, thinly sliced
  • 2 carrots, julienned
  • 1 cucumber, seeded and julienned
  • Optional: Spicy mayo for drizzling

Instructions

  1. Rinse the sushi rice until the water runs clear.
  2. Cook the rice with the water according to package directions or in a rice cooker.
  3. In a small saucepan, gently heat the rice vinegar, sugar, and salt until the sugar dissolves. Do not boil.
  4. Once the rice is cooked, transfer it to a large bowl. Slowly fold in the vinegar mixture until the rice is evenly seasoned and cooled slightly.
  5. Lay one sheet of nori on a bamboo rolling mat.
  6. Moisten your hands slightly. Spread about 1/2 cup of seasoned rice evenly over the nori, leaving a 1-inch border at the top edge.
  7. Arrange strips of fish, avocado slices, carrots, and cucumber in a line across the center of the rice.
  8. If using, drizzle a thin line of spicy mayo over the fillings.
  9. To roll, lift the edge of the mat closest to you. Fold the edge over the fillings, tucking it in tightly.
  10. Continue rolling, using the mat to keep the burrito firm. Moisten the top edge of the nori with a little water to seal the wrap.
  11. Repeat with the remaining ingredients.
  12. Slice each burrito in half diagonally before serving.

Notes

  • Use very sharp knives when slicing the fish and vegetables for clean edges.
  • Keep your hands damp while spreading the rice to prevent sticking.
  • Experiment with fillings like cooked shrimp, imitation crab, or cream cheese.
