Ingredients
Scale
1 pound pork tenderloin, cut into bite-sized pieces
1 tablespoon soy sauce
1 teaspoon cornstarch
1 tablespoon vegetable oil
1 cup fresh or canned pineapple chunks, drained if canned
1 red bell pepper, sliced
1/2 cup onion, chopped
2 cloves garlic, minced
1 tablespoon fresh ginger, grated
2 tablespoons brown sugar
1 tablespoon rice vinegar
1-2 teaspoons chili garlic sauce (adjust to your heat preference)
1/4 cup chicken broth
1 teaspoon sesame oil
Optional garnish: Sesame seeds, chopped green onions
Instructions
In a bowl, toss the pork pieces with soy sauce and cornstarch. Set aside for 10 minutes.
Heat the vegetable oil in a large skillet or wok over medium-high heat.
Add the seasoned pork and cook until browned on all sides. Remove the pork from the skillet and set aside.
Add the pineapple chunks, red bell pepper, and onion to the skillet. Stir-fry for 3 minutes until the vegetables soften slightly.
Add the minced garlic and grated ginger. Cook for 1 minute until fragrant.
In a small bowl, whisk together the brown sugar, rice vinegar, chili garlic sauce, and chicken broth to create the sauce.
Pour the sauce into the skillet. Bring it to a simmer, stirring constantly until the sauce thickens slightly.
Return the cooked pork to the skillet. Toss everything together to coat the pork and vegetables evenly with the sauce.
Stir in the sesame oil during the last minute of cooking.
Serve immediately over rice, garnished with sesame seeds and green onions if desired.
Notes
Sasha often skips measuring the chili sauce, using intuition for the right amount of heat. Trust your taste!
If you like your pineapple caramelized, sear the chunks separately before adding the vegetables.
For extra flavor, marinate the pork for 30 minutes instead of just 10.
