Ingredients

Scale
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 2 bell peppers (any color), chopped
  • 3 cloves garlic, minced
  • 1 large sweet potato, peeled and diced (about 2 cups)
  • 2 (15-ounce) cans black beans, rinsed and drained
  • 1 (14.5-ounce) can diced tomatoes, undrained
  • 1 (15-ounce) can tomato sauce
  • 1 cup vegetable broth
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • Pinch of cayenne pepper (optional, for extra fire)
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat.
  2. Add the chopped onion and bell peppers. Cook until softened, about 5 to 7 minutes.
  3. Stir in the minced garlic and cook for 1 minute until fragrant.
  4. Add the diced sweet potato, black beans, diced tomatoes, tomato sauce, and vegetable broth to the pot.
  5. Stir in the chili powder, cumin, smoked paprika, and cayenne pepper, if using. Mix everything well.
  6. Bring the chili to a simmer. Once simmering, reduce the heat to low, cover the pot, and let it cook for 20 to 25 minutes, or until the sweet potatoes are tender.
  7. Remove the lid for the last 5 minutes of cooking if you prefer a thicker chili.
  8. Taste and season with salt and pepper as needed.
  9. Serve hot and enjoy your creation!
