This Sweet Potato Casserole with Marshmallows is a classic Thanksgiving favorite. It’s creamy, sweet, and topped with gooey marshmallows, making it a comforting and delicious side dish for your holiday table. It’s a recipe born from friendship and shared kitchen moments.

Ingredients

Scale
  • 4 large sweet potatoes (about 2 pounds)
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1 cup mini marshmallows

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Wash the sweet potatoes and prick them several times with a fork.
  3. Bake the sweet potatoes directly on the oven rack for 50-60 minutes, or until they are tender when pierced with a fork.
  4. Once baked, carefully remove the sweet potatoes from the oven and let them cool slightly.
  5. Cut the sweet potatoes in half and scoop the flesh into a large mixing bowl. Discard the skins.
  6. Add the softened butter, granulated sugar, milk, vanilla extract, cinnamon, and salt to the sweet potato flesh.
  7. Mash the ingredients together until smooth and well combined. An electric mixer can make this easier.
  8. Pour the sweet potato mixture into a greased 9×13 inch baking dish.
  9. Spread the mixture evenly in the dish.
  10. Sprinkle the mini marshmallows evenly over the top of the sweet potato mixture.
  11. Bake for an additional 20-25 minutes, or until the marshmallows are golden brown and bubbly.
  12. Let it rest for a few minutes before serving.

Notes

  • For an extra festive touch, you can add a sprinkle of chopped pecans or walnuts over the marshmallows before baking.
  • If you prefer a less sweet casserole, you can reduce the amount of granulated sugar.
  • Ensure your butter is softened for easier mixing.
