Make a rich, velvety tomato basil soup by roasting the tomatoes first for deep flavor. This recipe is quick enough for a weeknight dinner.

Ingredients

Scale
  • 3 lbs Roma tomatoes, halved
  • 1 large yellow onion, quartered
  • 4 cloves garlic, unpeeled
  • 3 tablespoons olive oil, divided
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 cups vegetable broth
  • 1/2 cup heavy cream (or full-fat coconut milk for dairy-free)
  • 1/2 cup fresh basil leaves, packed
  • 1/4 cup grated Parmesan cheese, plus more for serving
  • 1 teaspoon sugar (optional, to balance acidity)

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 Celsius).
  2. Toss the halved tomatoes, onion quarters, and unpeeled garlic cloves with 2 tablespoons of olive oil, salt, and pepper on a baking sheet.
  3. Roast for 30 to 35 minutes, until the tomatoes are slightly charred and soft.
  4. Peel the garlic cloves once cool enough to handle.
  5. Transfer the roasted vegetables (tomatoes, onion, garlic) to a large pot or Dutch oven.
  6. Add the vegetable broth and bring the mixture to a simmer over medium heat. Cook for 10 minutes to allow flavors to meld.
  7. Remove the pot from the heat. Use an immersion blender to blend the soup until smooth. Alternatively, carefully transfer the soup in batches to a standard blender and blend until velvety.
  8. Return the soup to low heat. Stir in the heavy cream, fresh basil, Parmesan cheese, and sugar, if using. Heat through gently, but do not boil.
  9. Taste and adjust seasoning if needed. Serve hot, garnished with extra Parmesan and fresh basil.

Notes

  • For an even smoother texture, press the blended soup through a fine-mesh sieve before adding the cream.
  • If you want a vegan version, substitute the heavy cream with full-fat coconut milk and omit the Parmesan cheese or use a vegan alternative.
  • This soup pairs perfectly with a classic grilled cheese sandwich for dipping.
