Use up your leftover Thanksgiving or holiday turkey and cranberry sauce in this easy, warm, and satisfying Turkey Cranberry Panini. It makes the perfect fall lunch!

Ingredients

Scale
  • 2 slices bread (sourdough or whole grain recommended)
  • 3 ounces sliced cooked turkey
  • 2 tablespoons cranberry sauce
  • 1 ounce cheese (Provolone or Swiss suggested)
  • 1 teaspoon butter or mayonnaise for grilling

Instructions

  1. Spread butter or mayonnaise evenly on one side of each slice of bread. This will be the outside of your panini.
  2. On the unbuttered side of one slice of bread, layer the cheese.
  3. Top the cheese with the sliced turkey.
  4. Spread the cranberry sauce evenly over the turkey.
  5. Top with the second slice of bread, butter-side up.
  6. Heat a panini press or a skillet over medium heat.
  7. Place the sandwich in the press or skillet. If using a skillet, place another heavy pan on top of the sandwich to press it down.
  8. Grill for 3 to 4 minutes per side, or until the bread is golden brown and the cheese is melted and gooey.
  9. Remove from heat, slice in half, and serve immediately.

Notes

  • Feel free to add a thin slice of red onion or a smear of Dijon mustard for extra flavor.
  • If you don’t have a panini press, a skillet works perfectly well. Just press down firmly while cooking.
  • This recipe is a wonderful way to repurpose holiday leftovers quickly.
