Ingredients

Scale
  • 2 large sweet potatoes
  • 2 tablespoons butter
  • 1/4 cup milk
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • Optional toppings: chopped chives, crumbled bacon, sour cream

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the sweet potatoes and prick them all over with a fork.
  3. Bake the sweet potatoes directly on the oven rack for 45-60 minutes, or until tender when pierced with a knife.
  4. Let the sweet potatoes cool slightly until they are easy to handle.
  5. Cut each sweet potato in half lengthwise.
  6. Scoop out the flesh into a bowl, leaving about a 1/4-inch shell intact.
  7. Mash the sweet potato flesh with butter, milk, salt, and pepper until smooth and creamy.
  8. Spoon the mixture back into the sweet potato shells.
  9. Bake again for 15-20 minutes, or until heated through and the tops are lightly golden.
  10. Serve hot with your favorite toppings.

Notes

  • For a richer flavor, you can use heavy cream instead of milk.
  • Adjust the amount of salt and pepper to your preference.
  • Get creative with toppings! Shredded cheese or a dollop of Greek yogurt are also great options.
