Ingredients
Scale
1 cup (2 sticks) unsalted butter, softened
1/2 cup granulated sugar
1 teaspoon vanilla extract
2 1/4 cups all-purpose flour
1/4 teaspoon salt
1 cup soft caramel candies (or pre-made soft caramel sauce)
2 tablespoons heavy cream
1 cup milk chocolate chips
1 tablespoon coconut oil (or shortening)
Instructions
Preheat your oven to 350 degrees F. Line baking sheets with parchment paper.
Beat the softened butter, sugar, and vanilla extract together in a large bowl until light and fluffy for the shortbread base.
Gradually mix in the flour and salt until just combined to form a soft dough. Do not overmix.
Press the dough evenly into the bottom of a 9×13 inch baking pan, creating a thin, uniform layer for the shortbread base.
Bake the shortbread base for 15 to 18 minutes, or until the edges are lightly golden. Let it cool completely on a wire rack.
Prepare the caramel layer: If using soft caramels, place them in a microwave-safe bowl with the heavy cream. Microwave in 30-second intervals, stirring until smooth and completely melted.
Pour the warm caramel evenly over the cooled shortbread base. Spread it gently to cover the entire surface. Let the caramel set for at least 30 minutes at room temperature or 15 minutes in the refrigerator until tacky but not runny.
Cut the cooled, set caramel-topped shortbread into cookie-sized bars or squares.
Melt the chocolate chips and coconut oil together in a microwave-safe bowl in 30-second bursts, stirring until smooth.
Dip the bottom of each caramel bar into the melted chocolate, or drizzle the chocolate over the tops of the bars.
Place the finished cookies back on the parchment paper and allow the chocolate to set completely before serving or storing.
Notes
For a cleaner cut on the caramel layer, chill the entire shortbread base thoroughly before slicing.
Use high-quality milk chocolate for the best candy bar flavor replication.
You can substitute the shortbread base with a soft, chewy sugar cookie dough if you prefer a softer cookie texture over a crisp shortbread.
