Ingredients
Scale
1/2 cup tahini
1/4 cup fresh lemon juice
2 tablespoons cold water (or more, for thinning)
1 clove garlic, minced
1 tablespoon maple syrup
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
Place the tahini, lemon juice, minced garlic, maple syrup, salt, and pepper into a small bowl or a jar with a lid.
Whisk vigorously or shake the jar. The mixture will initially seize up and become very thick.
Slowly add the cold water, one tablespoon at a time, while continuing to whisk or shake until the dressing becomes smooth and creamy.
Continue adding water, one teaspoon at a time, until you reach your desired pouring consistency.
Taste the dressing and adjust salt or lemon juice as needed before serving or storing.
Notes
If your tahini is very thick, you may need slightly more water to achieve creaminess.
For a thinner dressing, increase the water content slightly. For a thicker sauce, use less water.
This dressing keeps well in an airtight container in the refrigerator for up to one week. Stir well before using after refrigeration.
