Make a rich and flavorful soup by roasting carrots before blending them with ginger and coconut milk for a naturally creamy, dairy-free texture.

Ingredients

Scale
  • 2 lbs carrots, peeled and chopped
  • 1 large yellow onion, quartered
  • 4 cloves garlic, unpeeled
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 inch fresh ginger, peeled and roughly chopped
  • 4 cups vegetable broth
  • 1 (13.5 oz) can full-fat coconut milk
  • 1 tablespoon fresh lime juice
  • Optional garnish: Toasted pumpkin seeds

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss the chopped carrots, onion quarters, and unpeeled garlic cloves with olive oil, salt, and pepper on a baking sheet.
  3. Roast for 25 to 30 minutes, until the carrots are tender and slightly caramelized.
  4. Remove the garlic skins once cool enough to handle.
  5. Transfer the roasted vegetables and the chopped fresh ginger to a large pot or Dutch oven.
  6. Add the vegetable broth to the pot. Bring the mixture to a simmer over medium heat and cook for 10 minutes to allow the ginger flavor to infuse.
  7. Carefully transfer the soup mixture to a high-speed blender in batches. Add the full-fat coconut milk.
  8. Blend until completely smooth and creamy. If the soup is too thick, add a little water or more broth until you reach your desired consistency.
  9. Return the blended soup to the pot. Stir in the lime juice. Heat gently until warmed through, but do not boil.
  10. Taste and adjust salt and pepper as needed before serving.

Notes

  • For an extra creamy texture without coconut, substitute 1 cup of raw cashews (soaked in hot water for 30 minutes and drained) for half of the coconut milk.
  • Roast the carrots until they are very soft; this maximizes their sweetness and flavor contribution.
  • If you prefer a milder ginger flavor, use only 1/2 inch of ginger or add it during the simmering stage instead of blending it raw.
