Make a rich, creamy, dairy-free strawberry ice cream using oat milk as the base. This recipe yields a smooth texture suitable for churning or no-churn preparation.

Ingredients

Scale
  • 1 cup raw cashews, soaked in hot water for 30 minutes and drained
  • 1 cup full-fat oat milk (chilled)
  • 1 cup fresh or frozen strawberries, hulled
  • 1/2 cup maple syrup
  • 1/4 cup refined coconut cream (solid part only, chilled)
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon guar gum (optional, for extra stability)
  • Pinch of salt

Instructions

  1. Combine the soaked and drained cashews, chilled oat milk, strawberries, maple syrup, coconut cream, vanilla extract, guar gum (if using), and salt in a high-speed blender.
  2. Blend on high until the mixture is completely smooth and creamy. Stop and scrape down the sides as needed. The mixture should have no graininess.
  3. Taste the base and adjust sweetness if necessary.
  4. Chill the ice cream base in the refrigerator for at least 4 hours, or until very cold.
  5. If using an ice cream maker: Pour the chilled base into your machine and churn according to the manufacturer’s directions until it reaches a soft-serve consistency.
  6. If making no-churn: Pour the chilled base into a freezer-safe container. Freeze for 1 hour, then remove and whisk vigorously to break up ice crystals. Return to the freezer. Repeat this whisking process every 45 minutes for 3-4 hours until firm.
  7. Transfer the finished ice cream to an airtight container and freeze for an additional 2-4 hours to firm up before serving.

Notes

  • Soaking the cashews is necessary to achieve the smoothest possible base.
  • Using full-fat oat milk provides better creaminess than standard beverage oat milk.
  • If you prefer a stronger strawberry flavor, add 1/2 teaspoon of lemon juice to brighten the taste.
  • For the best texture, allow the finished ice cream to sit on the counter for 5-10 minutes before scooping.
