Make a rich, creamy, and vibrant orange cheese sauce substitute for macaroni and cheese using sweet potatoes as the base. This recipe is entirely plant-based and delivers comfort food flavor.

Ingredients

Scale
  • 1 large sweet potato (about 1.5 cups cooked and mashed)
  • 1/2 cup unsweetened plain plant milk (soy or oat recommended)
  • 1/4 cup nutritional yeast
  • 2 tablespoons lemon juice
  • 1 tablespoon olive oil
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon turmeric (for color boost)
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper

Instructions

  1. Peel and chop the sweet potato into 1-inch cubes.
  2. Place the sweet potato cubes in a saucepan, cover with water, and bring to a boil. Cook until fork-tender, about 10 to 15 minutes.
  3. Drain the sweet potatoes well and transfer them to a high-speed blender.
  4. Add the plant milk, nutritional yeast, lemon juice, olive oil, onion powder, garlic powder, smoked paprika, turmeric, salt, and pepper to the blender.
  5. Blend on high speed until the sauce is completely smooth and creamy. Stop and scrape down the sides as needed.
  6. If the sauce is too thick, add plant milk, one tablespoon at a time, until you reach your desired consistency for coating pasta.
  7. Taste the sauce and adjust salt or lemon juice as necessary.
  8. Pour the sauce over cooked macaroni noodles and stir to coat evenly. Serve immediately.

Notes

  • For the smoothest texture, ensure your sweet potatoes are very soft before blending.
  • If you do not have a high-speed blender, press the sauce through a fine-mesh sieve after blending for an extra velvety finish.
  • This sauce thickens as it cools; reheat gently on the stovetop with a splash of plant milk if needed.
