These Veggie Hummus Pinwheels are a fun, easy, and colorful snack perfect for your kids’ lunchboxes or as a quick after-school treat. They roll up beautifully and taste amazing!

Ingredients

Scale
  • 6 large whole wheat tortillas
  • 1 cup hummus (store-bought or homemade)
  • 1/2 cup finely shredded carrots
  • 1/2 cup finely chopped red bell pepper
  • 1/4 cup finely chopped spinach
  • 1/4 cup crumbled feta cheese (optional)
  • 2 tablespoons cream cheese, softened

Instructions

  1. In a medium bowl, combine the hummus, softened cream cheese, shredded carrots, chopped red bell pepper, and chopped spinach. Mix well until everything is evenly distributed.
  2. If you are using feta, gently fold it into the hummus mixture now.
  3. Lay one tortilla flat on a clean surface. Spread about 2-3 tablespoons of the veggie hummus mixture evenly over the entire surface of the tortilla, leaving about a half-inch border clear on one long edge.
  4. Starting from the opposite long edge, roll the tortilla up tightly.
  5. Wrap the rolled tortilla tightly in plastic wrap. Repeat with the remaining tortillas and filling.
  6. Refrigerate the wrapped rolls for at least 30 minutes. This helps them firm up, making slicing easier.
  7. Once chilled, unwrap each roll. Use a sharp knife to slice each roll into 1-inch thick pinwheels.
  8. Arrange the pinwheels on a platter and serve immediately or store them in an airtight container in the refrigerator.

Notes

  • For extra flavor, you can mix in a dash of garlic powder with the hummus mixture.
  • If your children prefer, use white flour tortillas instead of whole wheat.
  • Make these ahead of time! They keep well in the fridge for up to two days.
