Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 pound frozen peas
  • 1/2 cup fresh mint leaves, packed
  • 1/4 cup heavy cream (optional)
  • Salt and black pepper to taste

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and cook until softened, about 5 minutes.
  3. Stir in the minced garlic and cook for 1 minute more until fragrant.
  4. Pour in the vegetable broth and bring the mixture to a simmer.
  5. Add the frozen peas and cook until they are heated through, about 3-5 minutes.
  6. Remove the pot from the heat. Stir in the fresh mint leaves.
  7. Carefully transfer the soup to a blender (or use an immersion blender) and blend until completely smooth.
  8. Return the soup to the pot. If using, stir in the heavy cream.
  9. Season with salt and pepper to your liking. Heat gently before serving warm.

Notes

  • For a vegan version, skip the heavy cream or use a plant-based alternative.
  • You can adjust the amount of mint to control the intensity of the flavor.
  • If you prefer a thicker soup, simmer the peas slightly longer before blending.
