Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 (10 ounce) package frozen chopped spinach, thawed and squeezed very dry
  • 1 (14 ounce) can artichoke hearts, drained and chopped
  • 4 cups vegetable broth
  • 1/2 cup heavy cream
  • 4 ounces cream cheese, cubed
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and cook until soft, about 5 minutes.
  3. Stir in the minced garlic and cook for 1 minute until fragrant.
  4. Add the dried spinach and chopped artichoke hearts to the pot. Stir well.
  5. Pour in the vegetable broth. Bring the mixture to a simmer.
  6. Reduce heat to low. Stir in the heavy cream and cubed cream cheese until the cheese melts and the soup is smooth.
  7. Stir in the Parmesan cheese until fully incorporated.
  8. Season with salt and pepper to your liking. Heat through gently without boiling.
  9. Serve hot, sharing the warmth with friends.

Notes

  • Squeeze the spinach very dry; excess water makes the soup thin.
  • For a smoother soup, use an immersion blender for a few pulses before adding the cream.
  • You can substitute half-and-half for heavy cream for a lighter texture.
