Make individual, creamy cheesecake cups using cookie butter. This recipe requires no oven and is simple to assemble.

Ingredients

Scale
  • 1 cup crushed Biscoff cookies
  • 4 tbsp unsalted butter, melted
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1/2 cup cookie butter spread, plus 2 tbsp for topping
  • 1 tsp vanilla extract
  • 1/2 cup heavy whipping cream
  • 1/4 cup cookie butter, slightly warmed for drizzling

Instructions

  1. Combine the crushed cookies and melted butter. Press this mixture evenly into the bottom of 6 small cups or ramekins. Chill for 10 minutes.
  2. In a medium bowl, beat the softened cream cheese until smooth.
  3. Add the powdered sugar and 1/2 cup of cookie butter spread to the cream cheese. Beat until fully combined and creamy.
  4. Stir in the vanilla extract.
  5. In a separate bowl, whip the heavy whipping cream until soft peaks form.
  6. Gently fold the whipped cream into the cream cheese mixture until just combined. Do not overmix.
  7. Spoon or pipe the cheesecake filling over the chilled crusts in each cup.
  8. Refrigerate the cups for at least 4 hours, or until firm.
  9. Before serving, warm the remaining 1/4 cup of cookie butter slightly so it drizzles easily. Drizzle the warmed cookie butter over the top of each cheesecake cup.

Notes

  • Use Biscoff cookies or a similar speculoos cookie for the crust.
  • For a smoother drizzle, microwave the topping cookie butter for 10-15 seconds.
  • You can substitute graham crackers for the cookie butter crust if desired.
