You can make this comforting mixed berry cobbler quickly, using either fresh or frozen berries. It features a sweet, jammy fruit filling topped with a tender, biscuit-like topping. This is a perfect, easy dessert for any season.

Ingredients

Scale
  • 4 cups mixed berries (fresh or frozen, such as blackberries, blueberries, raspberries)
  • 1/2 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup cold unsalted butter, cut into small pieces
  • 1/2 cup milk
  • 2 tablespoons coarse sugar, for sprinkling

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease an 8×8 inch baking dish.
  2. Prepare the berry filling: In a large bowl, gently combine the mixed berries, granulated sugar, cornstarch, lemon juice, and vanilla extract. Pour this mixture evenly into the prepared baking dish.
  3. Prepare the biscuit topping: In a separate medium bowl, whisk together the flour, baking powder, and salt.
  4. Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
  5. Pour in the milk and stir just until a soft dough forms. Do not overmix.
  6. Drop spoonfuls of the biscuit dough over the berry filling, leaving small gaps between the mounds so the filling bubbles up.
  7. Sprinkle the coarse sugar evenly over the topping.
  8. Bake for 35 to 40 minutes, or until the topping is golden brown and the berry filling is thick and bubbly.
  9. Let the cobbler cool for at least 15 minutes before serving warm, preferably with vanilla ice cream.

Notes

  • If you use frozen berries, do not thaw them first; use them straight from the freezer. You may need to add 5 minutes to the baking time.
  • For a different flavor, substitute half of the milk with heavy cream for a richer biscuit topping.
  • This recipe is a great last minute dessert idea when you need something quick and warm.
