Ingredients
Scale
1 teaspoon active dry yeast
1 teaspoon granulated sugar
1 cup warm water (about 105-115F)
2 1/2 cups all-purpose flour, plus more for dusting
1 teaspoon salt
2 tablespoons olive oil
Optional: 2 tablespoons plain Greek yogurt for extra softness
Instructions
Activate the yeast: In a small bowl, combine the warm water, yeast, and sugar. Let stand for 5 to 10 minutes until foamy.
In a large bowl, whisk together the flour and salt. Add the yeast mixture and olive oil (and Greek yogurt, if using). Mix until a shaggy dough forms.
Turn the dough onto a lightly floured surface. Knead for 5 to 7 minutes until the dough is smooth and elastic.
Place the dough in a lightly oiled bowl, turning to coat. Cover the bowl with plastic wrap or a damp towel and let it rise in a warm place for 1 hour, or until doubled in size.
Punch down the dough gently. Divide it into 8 equal pieces. Roll each piece into a ball. Cover the balls and let them rest for 10 minutes.
Roll each ball into a circle about 1/8 inch thick and 6 inches in diameter.
Cook the pitas: Heat a cast iron skillet or griddle over medium-high heat until very hot (no oil needed). Place one pita on the hot surface. Cook for 1 to 2 minutes per side. The pita should puff up dramatically. If it does not puff, increase the heat slightly for the next one.
Remove the puffed pita and wrap it immediately in a clean kitchen towel to keep it soft while you cook the remaining dough.
Notes
For the softest pita, make sure your water is the correct temperature for activating the yeast.
If using the oven method, preheat your oven to 450F with a pizza stone or baking sheet inside. Cook the rolled pitas directly on the hot surface for 2 to 3 minutes until puffed.
Store cooked pitas wrapped tightly at room temperature for up to 3 days. Reheat briefly in a microwave or toaster oven to restore softness.
