Ingredients
Scale
1 whole head garlic
1 large egg yolk, room temperature
1 teaspoon Dijon mustard
1 teaspoon fresh lemon juice
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup neutral oil (like canola or grapeseed)
2 tablespoons extra virgin olive oil
Instructions
Preheat your oven to 400°F (200°C). Slice about 1/4 inch off the top of the garlic head to expose the cloves. Drizzle the exposed top with a little olive oil, wrap the head tightly in aluminum foil, and roast for 35 to 45 minutes until the cloves are soft and golden brown. Let it cool completely.
Squeeze the soft roasted garlic pulp out of the skins into a small bowl. Mash it with a fork until it forms a smooth paste.
In a medium bowl, whisk together the egg yolk, Dijon mustard, lemon juice, salt, and pepper until combined.
Add the roasted garlic paste to the yolk mixture and whisk well.
Begin adding the neutral oil, one drop at a time, while whisking constantly and vigorously. This slow addition is crucial for emulsification.
Once the mixture starts to thicken (after about 1/4 cup of oil is added), you can increase the oil stream to a very thin, steady drizzle, still whisking constantly.
When all the neutral oil is incorporated, slowly whisk in the 2 tablespoons of extra virgin olive oil.
Taste the aioli and adjust salt, pepper, or lemon juice as needed.
Notes
If your aioli separates (breaks the emulsion), start over with a fresh egg yolk in a clean bowl. Slowly whisk the broken mixture into the new yolk, drop by drop, until it re-emulsifies.
For a quicker, mayonnaise-based version, skip the roasting and egg yolk steps. Combine 1 cup of good quality mayonnaise with the roasted garlic paste, lemon juice, and seasonings.
Store homemade aioli in an airtight container in the refrigerator for up to one week.
