Enjoy these wonderfully chewy Maple Peanut Granola Bars, perfect for a satisfying snack. Anya shares her favorite recipe for a treat that brings together sweet maple and salty peanuts.

Ingredients

Scale
  • 1 cup rolled oats
  • 1/2 cup creamy peanut butter
  • 1/3 cup maple syrup
  • 1/4 cup chopped peanuts
  • 1/4 cup unsweetened shredded coconut
  • 2 tablespoons flaxseed meal
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 325°F (160°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang on the sides.
  2. In a medium saucepan over low heat, gently warm the peanut butter and maple syrup together. Stir until they are smooth and fully combined. Do not let it boil.
  3. Remove the saucepan from the heat. Stir in the rolled oats, chopped peanuts, shredded coconut, flaxseed meal, and salt until everything is evenly coated.
  4. Press the mixture firmly and evenly into the prepared baking pan. Use the back of a spatula or another piece of parchment paper to pack it tightly. This step is key for chewy bars.
  5. Bake for 18 to 20 minutes, or until the edges are lightly golden brown.
  6. Let the bars cool completely in the pan on a wire rack. Cooling fully helps them hold their shape.
  7. Once cool, use the parchment paper overhang to lift the slab out of the pan. Cut into 12 even bars.

Notes

  • For easier cutting, chill the bars in the refrigerator for 30 minutes before slicing.
  • Store leftover bars in an airtight container at room temperature for up to one week.
  • You can substitute almond butter for peanut butter if you prefer.
  • For extra crunch, add a sprinkle of flaky sea salt on top before baking.
