Make the best crispy potato chips at home using three methods: deep frying for maximum crunch, oven baking for a healthier option, or using an air fryer for quick results.
Prepare the potatoes: Peel the potatoes if desired, then slice them very thinly, aiming for 1/16 inch thickness. A mandoline slicer works best for uniform slices.
Remove starch: Place the sliced potatoes in a large bowl of cold water. Soak for at least 30 minutes, or up to 2 hours, changing the water once. This step removes starch and is key for crispiness.
Dry thoroughly: Drain the potatoes completely. Spread the slices in a single layer on clean kitchen towels or paper towels. Pat them completely dry. Moisture prevents crisping.
Choose your method:
Deep Fry Method (Maximum Crunch): Heat 3 inches of oil in a heavy-bottomed pot to 325°F (160°C). Fry the chips in small batches, stirring occasionally, until golden brown and crisp (about 3-5 minutes). Remove with a slotted spoon and drain on a wire rack set over paper towels. Immediately sprinkle with salt.
Oven Baked Method (Healthier Option): Preheat your oven to 350°F (175°C). Toss the dry potato slices with 1 tablespoon of oil. Arrange them in a single layer on baking sheets lined with parchment paper. Bake for 15-20 minutes, flipping halfway, until edges brown and chips are crisp. Season immediately.
Air Fryer Method (Quick Snack): Preheat the air fryer to 300°F (150°C). Lightly toss the dry slices with 1 teaspoon of oil. Place chips in a single layer in the basket (work in batches). Air fry for 10-15 minutes, shaking the basket every 5 minutes, until golden and crisp. Season immediately.
Combine seasoning: If using, mix salt and optional seasonings together. Sprinkle evenly over the hot chips right after cooking.
Notes
For kettle style chips, soak the slices in ice water for 1 hour, then rinse and dry completely before frying.
If you want a ‘Lays style’ texture, ensure your slices are extremely thin, close to 1/20 inch.
Always cook in small batches to maintain oil temperature for the best crunch.
